Fossil & Fawn Pinot Noir is a Willamette Valley, Oregon Pinot made in a low-intervention wine made from organic fruit. This wine has an classic Oregon Pinot character: red berry and bramble fruit, forest floor and mushroomy earth, plus a wet-stone/mineral edge with a subtle savory note that keeps it food-friendly. It’s usually best now through about 3 to 5 years from vintage for peak freshness and texture (longer if you cellar it nice and cool), and it’s awesome with salmon, roast chicken with mushrooms, or semi-soft alpine cheeses like Gruyère
